Chocolate Peanut Butter Cake

A no sweat, egg-less treat amalgamating the nutty flavor of peanut butter with the crunch of chocolate chips.

125 gms butter

100 gm peanut butter

20 gms sugarfree/ castor sugar

125 gms flour

1 Tbsp baking powder

50 gms chocolate chunks

2-3 Tbsp icing sugar, for dusting

Method

Whip the butter, peanut butter and caster sugar in a large bowl.

In the mixture fold in the flour, baking powder and chocolate, one after the another.

Bake at 170 C for 35 minutes and serve.

Two Minute Brownie

It’s eggless, it’s tasty and it’s made oh-so-quickly. Two minutes is all you need to enjoy this mug brownie. Go ahead and try it.

2 Tbsp flour / maida

2 Tbsp powdered sugar (or according to taste)

2 Tbsp cocoa powder

2 Tbsp milk

1 Tbsp vegetable oil


Optional:

1 Tbsp peanut butter, nutella, chocolate syrup, maple syrup

Chopped walnuts

Method

Take a microwave friendly mug.

Add all the dry ingredients in it.

Now mix in the wet ingredients.

Microwave it for a minute or two. (Depends on your microwave settings.)

Enjoy your brownie with ice cream of your choice.

Low Fat Chocolate Brownies

Winner of the weekly Guilt Free bakes away decadent chocolate brownies with healthy ingredients like curd, olive oil, wheat flour, honey and nuts.

100 gm thick curd

100 gm honey

125 gm wheat flour

25 gm olive oil

50 gm chocolate powder

100 gm ground almonds

Walnuts coarse

50 gm cream

1 tsp baking powder

1/2 tsp baking soda

Method

Whisk curd till no lumps are formed, add almonds.

Add honey, oil. Whisk again.

Then sieve flour and chocolate powder 2 times.

Line the cake tin with butter paper and oil it.

In the cake batter add cream, baking powder and soda.

Fold in the flour and walnuts. (Do not beat too much)

Pour the mixture in a cake tin.

Cover with aluminum foil and place the cake in a preheated oven at 170 degrees for 30 minutes.

Uncover and bake again for 10 minutes till its done. Decorate as per your choice.

Fried Milk & Toffee Chocolates

An inventive dessert. Chocolate bars dipped in batter, coated with crumbs and fried. This is then placed on a bed of crushed cookied and topped with honey.

2 milk & toffee chocolates (you can use any other chocolate also)

30 gm refined flour-30gms

1 egg (optional)

50 gm bread crumbs

1 pack plain cookies

50 gm icing sugar (for garnish)

20 gm honey

Oil to deep fry

Method

Cut the chocolates in even sizes.

Make a batter with refined flour and eggs. (or flour and water)

Dip the chocolates in the batter and coat them with bread crumbs.

Deep fry in hot oil till they turn crisp from out side.

Crush cookies on a plate and place fried chocolate on top.

Pour honey on top. Sprinkle sugar and serve hot.

You can serve this with vanilla ice-cream.

Date Cake

A mouth watering cake with the goodness of dates and is easy to make. You cannot say no to this one!

Dry mixture:

In a bowl sieve maida, soda bi-carb and coco powder together.

Add chopped dates to this mixture.

Wet mixture:

Beat sugar and refined oil together in a mixer. Add milk and beat it again.

Add eggs and fold it in the mixture.

Start adding the dry mixture to the wet mixture gradually and keep stirring with a spatula till properly mixed.

Pour the mixture in a greased tin.

Bake at 180 degrees C for 30-40 minutes or till the knife inserted comes out clean.
